SOMERSET CIDER APPLE SAUCE
500g British bramley apples
150ml good medium/dry cider
60g dark muscavado sugar (less or more if preferred)
1 tsp cinnamon
1. Peel, core and chop the apples into a saucepan.
2. Add the cider, sugar, cinnamon and the juice of 1 lemon.
3. Cover and simmer for 10-15 minutes until apples are soft.
4. Turn off the heat and beat in the butter with a spoon until smooth.
If you have a glut of apples, increase the recipe and freeze down before adding the butter. When needed, defrost and add butter.
